Today I had a dentist appointment. I went all by myself. All. By. Myself.
You were so lucky to get your daddy all to yourself! You both survived but man did I miss you.
When I was home we decided to make homemade granola. Homemade granola? Really Ma?
Why yes my sweet girl.
Once upon a time Daddy worked at Sam's Club. He'd come home with lifetime supplies.
Lifetime supply of coffee filters?
Check.
Lifetime supply of vienna sausages?
Check.
Lifetime supply of sugar?
Check.
Lifetime supply of oatmeal?
Check.
Enter the need to make granola.
I'm going to share our recipe but only after I declare that I don't eat vienna sausages.
I DON'T EAT VIENNA SAUSAGES.
Great Granola.
3 c oatmeal
3 Tbsp brown sugar (we used dark cause that's what we had)
1/2 tsp cinnamon
1/4 tsp salt
1/2 c wheat germ
1/3 c honey
1/4 c vegetable oil
1 tsp vanilla extract
1/2 c cut up dried fruit (Daddy used raisins. Yuuuck!)
1/2 c chopped peanuts
Heat oven to 300°
Combine oats, salt, cinnamon, brown sugar and wheat germ in a large bowl.
Combine honey, oil and vanilla in small bowl.
Pour small bowl into big bowl.
Stir.
Spread out onto a baking sheet and bake for 15 minutes (at 300°).
Stir.
Bake for an additional 5-15 minutes. Stir every 5 minutes.
Place the pan on a wire rack to cool for 20 minutes stirring every 5 minutes.
Add the fruit (raisins yuck!!) and peanuts.
Store in an airtight container for up to 2 weeks.
Bam.
You love to be in the kitchen whenever Daddy and I are in there cooking. This time we were so exciting that you fell asleep!
